Job Description

JOB PURPOSE:

The Head Chef, will supervise and ensure the smooth running of all sections and day-to-day culinary operations in one of the kitchen of the restaurant. The Head Chef will assist with menu creation, food purchasing, personnel management and cost control, whilst ensuring product quality standards are met and that optimum service is provided to all restaurant guests and visitors.

DUTIES & RESPONSIBILITIES:

  • Assist with the management of the kitchen sections, operations and personnel, including all hygiene and cleanliness activities
  • Manage shift activities in the kitchen
  • Train and coach team members so they develop their system knowledge and personal skills
  • Direct their work, resolve issues/complaints/problems in a quick and efficient manner, encourage and performance manage where required to ensure product, service standards, customer satisfaction and company policies are achieved
  • Work pro actively, focusing on delivering standards whilst maximizing revenues and reducing costs
  • Assist with the development of menus, writing of recipes, costings, orders, storage and stock counts
  • Build strong relationships with all related departments

REQUIRED QUALIFICATIONS AND SKILLS:

  • High school graduate or equivalent
  • Formal culinary training and/or having a certificate/s in culinary arts are desirable
  • Minimum of 2 years experience in a similar position, and a further 5 years of kitchen experience
  • Excellent knowledge of various preparation, cooking methods, ingredients, sanitation principles kitchen procedures and industry’s best practices
  • Great attention to detail, organization and creativity
  • Ability to multi-taskand to follow pre-set recipes
  • Able to demonstrate excellent leadership skills; understand hotel management
  • Excellent interpersonal and communication skills to effectively interact with staff and guests
  • Must speak, read, and write English; knowledge of additional languages (Russian, etc.) will be considered an advantage
